	BUN BO XU is a Bun bo Hue noodle bar concept with 2 locations currently.... Royal Dish Made to the recipe of the granddaughter of Tong Phuoc Sung, royal cook to King Gia Long, Bun Bo Hue is a noodle soup from Hue served with thick round rice noodles, beef and pork. Rumour has it that the king, the queen and their son Bao Dai were so enamoured by this traditional dish that they ate it every day. The broth is cooked for two to three hours and is flavoured with lemon grass, shrimp paste and satay chilli paste. A number of Bun Bo varieties will be available, and each dish will be served with a plate of fresh herbs and spices. A Taste of Hue In addition to noodle soup, Bun Bo Xu will also serve Hue-style steamed rice flour rolls with six different fillings and two different sauces. These will not only complement the taste of the soup but will add extra variety to the menu. Bun Bo Xu is open at 4A Tran Hung Dao Q1 and 28 Cao Ba Quat, Q1 at the end of December. 	...note that "Allez Boo" is no more, having been replaced by a generic chain-type coffee shop. Many of the staff at "Go2 Bar" wear shirts with the "Allez Boo" logo on the back, but I'm not sure what the connection is... Cheers, Dave
